Saffron roasted pistachios

Lemon, Saffron & Sumac: A Spotlight on Our Flavoured Pistachios

Pistachios have long been a snacking staple, but the pistachio shelf has grown well past the plain roasted-and-salted bag. Alongside our classic roasted and salted pistachios and natural raw kernels, we also stock three flavoured varieties: lemon, saffron and sumac. If you've only tried the plain version, here's what sets each one apart and how to make the most of them.

Lemon Salted Pistachios: Bright and Zesty

Our lemon salted pistachios are roasted pistachios finished with a zesty lemon and salt seasoning. The citrus note sits on top of the pistachio's natural buttery flavour rather than overpowering it, which makes these a good option for anyone who finds plain salted nuts a bit one-note. They work well straight from the pack, but also earn their place in a party snack bowl or scattered over a green salad for a bit of crunch and tang.

Saffron Pistachios: Warm and Aromatic

Saffron pistachios take a different route, infusing the nuts with saffron for a subtle floral, slightly earthy aroma alongside the characteristic golden colour saffron is known for. This is the flavour to reach for if you want something a little more restrained than a heavily spiced or citrus-forward snack — it suits a gourmet snack platter, or a small dish set out for guests, better than an everyday lunchbox bag.

Sumac Pistachios: Tangy and Bold

Sumac is a tart, citrusy spice widely used in Middle Eastern cooking, and coating roasted pistachios in it gives a tangy, slightly sour edge that's more assertive than the lemon variety. It's a good match for savoury spreads like hummus or labneh, or simply as a more interesting alternative to salted nuts when you want extra flavour without reaching for something sweet.

Raw Kernels vs Roasted: Which One Do You Need

All three flavoured varieties are built on roasted pistachios, which have a firmer, crunchier bite and a more concentrated flavour from the roasting process. If you're cooking or baking rather than snacking, our raw pistachio kernels are usually the better starting point. Shelled and ready to use, they're a common choice for biryani and pulao, folded into cake or cookie batter, blended into pistachio butter, or used as a garnish for baklava and other Middle Eastern desserts — the neutral base lets them take on whatever flavour the dish calls for, rather than competing with a seasoning already baked in.

How to Serve Them

For entertaining, a small bowl of each flavour side by side makes for an easy, low-effort snack board — the colour and flavour contrast between lemon, saffron and sumac does most of the work for you. For everyday use, keep a resealable pack of one flavour at your desk or in the kitchen, and reach for the raw kernels whenever a recipe calls for pistachios as an ingredient rather than a snack. All of our pistachio varieties, along with the rest of our nuts and seeds range, are available in resealable packs designed to keep them fresh once opened — browse the full selection on our Nuts and Seeds collection page.
