Buying dried fruit, nuts and seeds in bulk is a great way to save money — but only if they stay fresh until you use them. Here's how to store your dried fruit and nuts and seeds so nothing goes to waste.
Keep everything airtight
Once a pack is opened, transfer the contents to an airtight container or reseal the bag tightly, squeezing out excess air. Exposure to air is the main reason nuts turn stale and dried fruit hardens.
Store in a cool, dry, dark place
A kitchen cupboard away from the oven, direct sunlight and any source of heat or moisture is ideal. Warmth speeds up the natural oils in nuts turning rancid, and moisture can encourage mould in dried fruit.
Consider the fridge or freezer for bulk buys
If you've bought a bulk size — like our raw cashews or walnuts in shell in 5kg bags — and won't get through it quickly, portion some off into the freezer. Nuts freeze well and will keep their flavour for months; just bring them back to room temperature before eating.
Watch out for these signs
Nuts that smell bitter, sharp or 'paint-like' have gone rancid and should be discarded. Dried fruit that feels unusually hard, or shows any sign of mould, is past its best.
